Hot Coffee

Americano
Espresso and hot water, in the right order and the right ratio — a long black coffee that keeps the crema instead of killing it.

Cappuccino
The Specialty Coffee Association defines it precisely: a 150–180 ml drink in equal thirds of espresso, steamed milk and dense foam.

Latte Coffee
Espresso and a lot of steamed milk with a thin cap of microfoam — the gentlest of the espresso drinks, and the one most people learn first.

Flat White
Stronger than a latte, smaller than a cappuccino, and served with velvet microfoam rather than a cap of froth. Australia and New Zealand both claim it.

Cortado
Equal parts espresso and steamed milk in a small glass — the Spanish answer to taking the edge off a shot without burying it.

Macchiato
An espresso stained with a spoonful of foam. The original is tiny and strong — nothing like the caramel drink that borrowed the name.

Mocha Coffee
Espresso, real chocolate and steamed milk. The trick is melting the chocolate into the shot before any milk arrives.

Caramel Coffee
A caramel latte built on real caramel sauce, cooked to the point where it tastes of caramel and not just of sweetness.

Hazelnut Coffee
Toasted hazelnuts steeped into milk, rather than hazelnut syrup — the difference between nutty and merely sweet.

Cinnamon Coffee
Cinnamon brewed with the grounds instead of dusted on the foam, so it tastes of spice all the way through.
Cold Coffee

Affogato
A scoop of vanilla gelato drowned in a hot shot of espresso. Two ingredients, thirty seconds, and one of the best desserts in Italy.

Iced Vanilla Coffee
Cold, sweet and clean — with a homemade vanilla syrup that tastes of vanilla rather than of sugar.

Brown Sugar Coffee
Shaken with brown sugar syrup and a pinch of cinnamon, poured over ice — the drink that made shaken espresso a category.

Iced Americano
Espresso over cold water and ice. The cleanest cold coffee there is — and the order you build it in decides whether it tastes watery.

Iced Latte
Espresso, cold milk, ice. Simple enough that the only two things that matter are the order and the amount of ice.

Iced Cappuccino
A cappuccino is defined by its hot foam, so an iced one has to get that texture another way. Here is the method that works.

Iced Chocolate
No coffee in this one — a proper cold chocolate made from melted chocolate rather than powder, for whoever is not drinking coffee.
