What Is Acidity in Coffee?

Read the tasting notes on a bag of specialty coffee and you will meet the word almost immediately. Bright acidity. Citric acidity. Malic, sparkling, juicy, crisp. It is the single most misunderstood word in coffee, because in everyday English acid means sour, corrosive, unpleasant — and in coffee it means very nearly the opposite.

Acidity is the quality that makes a coffee taste alive. Take it away and what is left is flat, no matter how sweet or heavy it is.

Acidity is not sourness

This is the distinction everything else rests on.

Acidity is a structural brightness — the lift you notice at the front and sides of the tongue, the thing that makes a good Kenyan coffee taste like blackcurrant rather than like warm brown liquid. It is a positive quality, and it is why the Specialty Coffee Association scores it on its cupping form at all.

Sourness is a defect. It is sharp, thin, and puckering, and it usually means one of two things: the coffee was under-extracted, or the cherries were picked unripe. A sour cup is a mistake somewhere in the chain. A bright cup is the point.

The clearest way to tell them apart is what happens afterwards. Acidity resolves into sweetness. Sourness just stops.

What is actually in the cup

Brewed coffee sits at a pH of roughly 4.85 to 5.10 — mildly acidic, and a good deal less so than orange juice at around 3.5. The character comes from which acids are present, not from how many.

  • Citric acid — the citrus and stone-fruit note. More abundant in arabica than robusta, and in coffee grown at altitude.
  • Malic acid — green apple, pear, a crisper edge than citric.
  • Phosphoric acid — inorganic, and unusual. It reads as a clean sparkle rather than a fruit note, and it is much of what makes the best Kenyan coffees taste the way they do.
  • Acetic acid — pleasant and winey in small amounts, vinegary and unpleasant in large ones. High levels usually mean fermentation ran too far.
  • Lactic acid — soft, creamy, rounded. More common in coffees given a deliberate controlled fermentation.
  • Chlorogenic acids — the largest group by weight in green coffee. They break down during roasting into quinic and caffeic acids, which is why a stale or long-held brew turns harsh and drying.

How it is measured

The Specialty Coffee Association's cupping form scores acidity from 6.00 to 10.00 in quarter points, and the crucial detail is that it is scored on quality, not on quantity.

A coffee with quiet, well-integrated acidity is not marked down for being quiet, and a fiercely bright one is not rewarded just for being loud. What the grader is judging is whether the acidity suits the coffee and resolves into sweetness. That is also why the same form does not penalise a low-acid natural or a Monsooned Malabar for being what they are.

The SCA's newer Coffee Value Assessment goes further and separates the two questions properly — recording the intensity of acidity on one scale and how much the taster liked it on another, so a description and a judgment are no longer collapsed into a single number.

What raises it and what flattens it

Almost every decision between the tree and the cup moves acidity in one direction or the other.

  • Altitude. Cooler nights slow the cherry down, the bean grows denser, and more acid develops. High-grown coffee is brighter, and that is the most reliable single predictor.
  • Species. Arabica carries markedly more acidity than robusta. The Coffee Board of India describes its CXR robusta as low in acidity with a soft, neutral cup — accurately.
  • Processing. Washed coffees read as more acidic because the fruit is removed before drying. Naturals taste heavier and sweeter, with the acidity folded into the fruit.
  • Roast. This is the biggest lever you control. Chlorogenic acids degrade as roasting continues, so a light roast keeps acidity and a dark roast strips it. Anyone selling a low-acid coffee is usually selling a dark roast.
  • Brewing. Under-extract — grind too coarse, water too cool, contact too short — and you get sourness. Over-extract and you get bitterness that buries acidity. The window between them is where brightness lives.
  • Water. This one surprises people. Water with high alkalinity buffers acids and produces a duller cup, which is why the SCA publishes a water standard at all. Very hard water can flatten an excellent coffee.

Indian coffee and acidity

Indian arabicas are generally known for balance rather than for sharp brightness — medium body, moderate acidity, and the subtle chocolate and spice notes that come with shade-grown cultivation under a monsoon climate. The Coffee Board describes the widely planted S.795 as a balanced cup with mocha-like notes, which is a fair summary of the country's style.

Monsooned Malabar is the deliberate extreme. Exposing green coffee to monsoon winds for months strips its acidity almost entirely, leaving something heavy, mellow and faintly earthy. It is the one Indian coffee designed around having no brightness at all.

Tasting for it deliberately

  • Slurp, do not sip. Aerosolising the coffee across the whole palate is how you find the acidity rather than just the body.
  • Notice where you feel it. Acidity registers at the front and along the sides of the tongue; bitterness sits at the back.
  • Taste it as it cools. Acidity is most legible in the middle of the temperature range, not when it is scalding.
  • Compare, do not introspect. Brew a washed coffee and a natural side by side on the same recipe. The difference teaches you the word faster than any description.

If your coffee tastes wrong

  • Sour, thin, salty? Under-extracted. Grind finer, use hotter water, or brew longer.
  • Harsh and drying? Over-extracted, or the brew has been sitting. Grind coarser or shorten the brew.
  • Flat and dull, with nothing wrong exactly? Either the roast is too dark or the water is too hard. Try a lighter roast first; it is the cheaper experiment.
